WA-RA Japanese restaurant is located on the 5th floor and is inspired by fishermen’s cuisine passed down from Japan’s Edo period. The space design weaves together the artistic concepts of rice fiber and sea foam bubbles. It can accommodate 124 guests. The cooking techniques follow traditional Japanese methods, with rice stalks grilled over a large fire, offering a visually striking display of flames, the enticing aroma of straw, and the pure, authentic flavors of the ingredients, creating a classic delicacy. The restaurant also features an OMAKASE private chef’s table with a custom-made, no-menu dining experience, as well as a bar that blends Japanese and wine culture. Led by Chef Ken Yu, SEEDS Restaurant presents fusion cuisines inspired by organic green dining from Europe, integration of haute cuisine, and bistro dishes. SEEDS has invested NTD 1 million in kitchen composters with biological digestants, allowing organic kitchen waste to decompose and deodorize through natural degradation. With the zero-waste principle, the processed waste is then provided to independent organic farmers as fertilizer, and the agricultural products are in turn harvested and arrive on the dining tables of the hotel, creating a sustainable positive cycle that connects the people in Taiwan.
