Zhan Lu Chinese Restaurant

Located on the 2nd floor of the hotel, Zhan Lu derived its name from one of the Lesser Courtly Songs in the Book of Odes, depicting a tipsy night banquet that continued all the way until dawn. The spatial design of the restaurant is in line with the oceanic image of the hotel. The luster and texture of coral reefs on the seabed reflect the expansive landscape of sea and mountain, whereas the contemporary, rounded lights and shades create a visual simulation of shallow ocean water. Led by Chef Nelson Wang, Zhan Lu features Chinese cuisine made with local ingredients from Taiwan. With more than 20 years of experience, Chef Wang has reinvented traditional Cantonese, Shanghai, and Sichuan dishes to present a feast for the eyes, nose, and taste buds.

The signature dish of the restaurant, Zhan Lu Roasted Duck is made with warm cherry ducks from Pingtung selected by roasted duck chef Yu Hsien-huang. The duck is marinated with exclusive sauces for two days, where the skin is separated from the flesh with an air compressor and the skin is colored with maltose. Afterwards, the duck is air dried for 12 hours and preserved in the refrigerator for 4 hours. Finally, the duck is hung vertically in a Cantonese roasting oven with a mild heat to get the crispy duck skin. The roasted duck is completed with an osmanthus flavored sauce. It is recommended to make your reservation two days in advance considering the complex preparational works.
